Tasty and Simple to Prepare Pyaz Ki Kachori Recipe

Pyaz ki kachori is a flavorsome Indian fry bread that’s especially popular in the Rajasthan region of the Indian subcontinent. This bread recipe is quite filling and doesn’t require any special gravy to be served with it. It can be enjoyed with tomato ketchup or spicy tamarind chutney. The Indian fry bread recipe below is easy to prepare and can be made ahead of time and served later by simply reheating it in the oven.

What you will need for the dough:

- Refined flour – two (2) cups

- Clarified butter (ghee) – 1/4 cup

- Salt – 1/2 teaspoon

What you will need for the filling:

- Onions (chopped finely) – two (2) cups

- Nigella seeds – one teaspoon

- Fennel seeds – two teaspoons

- Bay leaves – two

- Green chilies (finely chopped) – one and a half teaspoons

- Gram flour – two teaspoons

- Coriander powder – two teaspoons

- Red chili powder – two teaspoons

- Garam masala – one (1) teaspoon

- Fresh chopped coriander leaves – 3 teaspoons

- Oil – 2 tablespoons

- Oil for frying

Preparation:

- In a deep mixing bowl, combine the flour, ghee and salt.

- Rub the mixture lightly between your fingers to make a crumbly mix.

- Use some water to knead the mix into a soft dough.

- Divide the dough in 12 equal portions, cover with muslin cloth, and put aside.

- In a frying pan, take 2 tablespoons of oil and saute the onions, bay leaves, nigella seeds, chopped green chilies and fennel seeds.

- Once the onions turn see-through and light brown in color, add the garam masala, coriander powder, red chili powder and saute for a few minutes so that the spices coat the onions well.

- Add the gram flour and mix well.

- Take off the heat after one minute and allow it to cool completely.

- Remove the bay leaves.

- Add the fresh coriander leaves and salt, and mix well.

- Divide the filling in twelve portions.

- With the assistance of a rolling pin, roll out the dough to a 2 inch diameter circle.

- Place one portion of filling in the center of the rolled out dough and fold the dough around the filling to make a ball shape.

- Next, roll out the filled dough to a 3 in. diameter circle. Take care so the filling does not fall out.

- Repeat this process for the remaining dough and filling.

- Heat some oil in a frying pan.

- Fry the bread in the hot oil at medium flame.

- This will take some time to fry as it must cook from the inside. Fry until the bread is golden brown on either side. Drain on an absorbent paper towel and serve hot.
