The Glycemic Index Chart can get a bit confusing, if you are not positive about what everything means.

When you look at the glycemic index chart, there is many different numbers that go with the foods listed. They range from 0 to 100 depending on the food that is listed.
The numbers will show how your blood sugar will rise. A number like 92 will mean that it digests quick in your body, and will bring your blood sugar up fast.
The lower the number, the slower your digestive system will digests – which means that it will slowly change your blood sugar level, and that is much healthier for your body (more if you are diabetic).
Reading the numbers may take you some work, but understanding them is really simple. With most of the charts, a number lower than 55 means that it is low. Between 55-70 is in the middle, and above 70 is considered high.
All charts won’t present foods based on their index number – they are listed in food groups, or food types. Each chart is a bit different, but they are all working on the same principle.
Why Are Some Foods Ranking Lower than Others?
Folks who idly glance at the Glycemic Index Chart would be confused on lots of levels. After all, there would be very few that would have guessed that a Snickers bar ranks in the 40′s, but a bagel will hit you in the 70′s?
The reason for this is that a Snickers bar not only has chocolate, but it has peanuts, which have plenty of protein. The high content of protein in the peanuts slows the digestion of the rest of the food, and what it does is that it takes longer to digest.
Understanding the manner it works of the glycemic index. when you eat anything that is high on the index, you ought to eat it with protein. So add some peanut butter sandwich, and don’t hesitate to eat a high protein tuna sandwich.
Now you know why some foods may appear oddly ranked to you. In case you didn’t know better, it could appear like it was basically a listing of random numbers!
