Chicken Soup For Comfort

There is certainly nothing comparable to homemade chicken noodle soup. It is such a good thing, whether you are curling up while watching TV on a frosty, wet, wintry or trying hard to get a little down while getting over a cold or even flu.

This is the strength of chicken noodle soup. All of our mothers and grandmothers knew it and the soup companies in the industry realize it, too.

What several are not aware of is that fantastic chicken noodle soup is reasonably quick and straightforward to make in your own kitchen and, as an further benefit, you then also appreciate whats in it. My magic formula is for onions, carrots, celery and garlic to be prepared until very soft and partly caramelized in olive oil. Begin to add some broth and sliced up chicken, or chicken thighs if you like. Let the soup simmer as you sprinkle freshly ground black pepper, dried thyme and a bit of lemon juice for more depth.

One other technique is to prepare the noodles in a completely different pot in chicken broth – not in water – to give them a really good chicken flavor and avoiding them from getting overcooked. After that add them and additional broth and some frozen peas for color and extra flavor. That’s all. In case you have your own handmade chicken stock you are in great shape, however a good quality canned broth is very good, too. You could forget about the peas and it will certainly be good, but make sure to add the lemon juice.

If you’d rather, you can do what do and go with a head of roasted garlic as an alternative to fresh garlic. I took every roasted clove from its skin, after that finely diced them all and integrated them before I added the chicken sections. The range of flavor is great by doing this. I expect that you’ll make this before the months gets warm. We ate it last week with our close friends while the storm came down outside the house. It was just the right sort of weather for chicken noodle soup.
